Grown using the Guyot system, the vines provide balanced yields that result in the wine’s deep flavour persistence and elegant character. How it is produced After the manual harvest , the whole bunches undergo gentle pressing to extract only the free-run must. The base wine rests in stainless steel at a controlled temperature until spring. The subsequent prise de mousse using the Traditional Method is followed by a slow ageing on the lees for eighty-four months. The addition of a dosage of 2 g/l defines the distinctly dry character of this cuvée. History and Curiosities Born in 1995 from the expertise of Ferghettina, this Franciacorta Extra Brut DOCG encapsulates the soul of the winery’s twelve oldest vineyards. The result of meticulous hand harvesting and the exclusive use of prized free-run must, it offers a rare sensory experience. The patient ageing of 84 months on the lees according to the Traditional Method bestows the glass with an extremely fine perlage and perfect harmony.
